Every now and then an idea strikes, however small it may be, that excites me. After so many years of styling I have the confidence and experience to lead rather than follow, when appropriate. Not to say that all those years guarantee I can read the signals clearly. The client asked for a meringue top. Scooping the meringue, rather than spooning or piping or spreading, came to me. A small bolt of lightning for a job that is built on detail. The result gave me a huge kick.
